Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 tablespoon minced garlic (approximately 34 cloves)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces cream cheese (softened)
  • 1 cup freshly grated Parmesan cheese, plus extra for garnish
  • 12 ounces pasta (penne, fettuccine, or rotini)
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Prepare the Chicken: Season chicken breasts or thighs with salt, pepper, and Italian seasoning. Place them in the bottom of the crockpot.
  • Add Ingredients: Add minced garlic, chicken broth, heavy cream, and cream cheese into the crockpot. Sprinkle freshly grated Parmesan on top.
  • Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and easily shredded.
  • Shred Chicken: Remove the cooked chicken, shred it with two forks, and return it to the crockpot.
  • Cook Pasta: In a separate pot, cook pasta according to package instructions. Drain and set aside.
  • Combine: Add cooked pasta to the crockpot, stirring to coat it in the creamy garlic Parmesan sauce. Adjust seasoning with additional salt and pepper, if needed.
