- 2 pounds boneless, skinless chicken breasts or thighs
- 1 tablespoon minced garlic (approximately 3–4 cloves)
- 2 cups chicken broth
- 1 cup heavy cream
- 8 ounces cream cheese (softened)
- 1 cup freshly grated Parmesan cheese, plus extra for garnish
- 12 ounces pasta (penne, fettuccine, or rotini)
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Chicken: Season chicken breasts or thighs with salt, pepper, and Italian seasoning. Place them in the bottom of the crockpot.
- Add Ingredients: Add minced garlic, chicken broth, heavy cream, and cream cheese into the crockpot. Sprinkle freshly grated Parmesan on top.
- Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and easily shredded.
- Shred Chicken: Remove the cooked chicken, shred it with two forks, and return it to the crockpot.
- Cook Pasta: In a separate pot, cook pasta according to package instructions. Drain and set aside.
- Combine: Add cooked pasta to the crockpot, stirring to coat it in the creamy garlic Parmesan sauce. Adjust seasoning with additional salt and pepper, if needed.
- Garnish and Serve: Serve hot, garnished with fresh parsley and extra Parmesan cheese. Enjoy!
