  • 2 cups bow tie pasta (or penne, fusilli)
  • 3 cloves garlic, minced
  • ¼ cup yellow onion, chopped
  • ½ cup parmesan cheese, grated
  • ¼ cup cream cheese
  • 1 cup milk (or half and half)
  • 1 tbsp butter
  • 1 tbsp fresh parsley, chopped (for garnish)
  • 1 tsp lemon zest and 1 tbsp lemon juice (optional, for brightness)

Instructions

  • Prepare the Chicken:

    • Season chicken with salt, pepper, oregano, and chili powder.
    • Heat olive oil in a skillet over medium heat and sear the chicken for 8-10 minutes on each side until golden and fully cooked. Remove and set aside.
  • Make the Garlic Parmesan Sauce:

    • In the same skillet, melt butter and sauté minced garlic and chopped onions until fragrant (1-2 minutes).
    • Add chicken broth and uncooked pasta to the skillet. Stir to combine, cover, and simmer for 15-20 minutes, stirring occasionally, until pasta is cooked and the liquid is mostly absorbed.
  • Finish the Sauce:

    • Stir in milk, cream cheese, and grated parmesan. Mix until the sauce is creamy and smooth.
  • Combine Ingredients:

    • Slice the cooked chicken and layer it on top of the pasta.
    • Garnish with fresh parsley, lemon zest, and additional parmesan if desired.
