Ingredients:
- 1 lb (450g) sashimi-grade Ahi tuna, chilled
- 1/4 tsp (1.5g) sea salt
- 3 tbsp (45ml) soy sauce
- 2 tbsp (30ml) toasted sesame oil
- 1 tbsp (15ml) rice vinegar
- 1 tsp (5ml) honey
- 1 tsp (5g) fresh ginger, finely grated
- 1 clove (3g) garlic, minced
- 3 stalks (20g) green onions, thinly sliced
- 1 tbsp (8g) toasted sesame seeds
- 2 tbsp (15g) macadamia nuts, crushed
Instructions:
- Place the chilled Ahi tuna on a cutting board. Using a sharp knife, slice the tuna into 1/4-inch thick planks, then rotate and cut into 1/2-inch cubes.
- Gently toss the tuna cubes with sea salt in a chilled bowl to draw out excess moisture.
- In a separate small bowl, whisk together the soy sauce, toasted sesame oil, rice vinegar, honey, grated ginger, and minced garlic until the honey is fully dissolved and the oil is integrated.
- Pour the marinade over the tuna cubes. Using a rubber spatula or spoon, fold the mixture gently to ensure every piece is coated without crushing the fish.
- Fold in the sliced green onions, toasted sesame seeds, and crushed macadamia nuts just before serving to maintain their crisp texture.
