Ingredients:
- 3 cups (375g) all-purpose flour
- 1.5 cups (300g) granulated sugar
- 1 tbsp (12g) baking powder
- 0.5 tsp (3g) baking soda
- 2 tsp (5g) ground cinnamon
- 0.5 tsp (3g) salt
- 3 large eggs
- 1 cup (240ml) vegetable oil
- 0.5 cup (120ml) buttermilk
- 2 tsp (10ml) vanilla extract
- 2 cups (300g) Granny Smith apples, peeled and finely diced
- 1 cup (115g) walnuts, toasted and chopped
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) maple syrup
- 0.5 tsp (2.5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 10 inch Bundt pan with butter or baking spray, making sure you get every inch of the center tube.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, and salt.
- Create a well in the center of the dry ingredients. Add the eggs, vegetable oil, buttermilk, and vanilla extract.
- Whisk until the batter is smooth and velvety, but stop immediately once the flour disappears. Note: Overworking the gluten leads to a rubbery cake
- Toss the diced apples and chopped walnuts with one tablespoon of the flour you already measured out.
- Gently fold the fruit and nut mixture into the batter using a spatula until evenly distributed.
- Pour the batter into the prepared pan and smooth the top with your spatula.
- Bake for 55–65 minutes until the edges pull away from the pan and a skewer comes out clean.
- Let the cake cool in the pan for 10 minutes before flipping it onto a wire rack.
- Mix the powdered sugar, maple syrup, and vanilla for the glaze and drizzle it over the cooled Apple Walnut Bundt Cake.
