Ingredients:
- 1 lb (450g) firm eggplant
- 1 tsp (6g) kosher salt
- 1/2 cup (65g) all-purpose flour
- 1 tbsp (8g) cornstarch
- 2 large (110g) eggs
- 1 cup (60g) Panko breadcrumbs
- 1/2 cup (50g) grated Parmesan cheese
- 1 tsp (2g) garlic powder
- 1/2 tsp (1g) smoked paprika
- 1/4 tsp (1.5g) black pepper
- 2 tbsp (30ml) extra virgin olive oil
- Fresh parsley, chopped
Instructions:
- Cut the eggplant into uniform 3x1/2 inch strips. Toss them with salt in a colander and let them sit for 10 minutes to sweat.
- Rinse the salt off under cold water and pat the eggplant strips completely dry with paper towels.
- In a shallow bowl, mix flour and cornstarch. Toss the strips in the mixture until lightly coated, shaking off all excess.
- Dip each strip into the beaten eggs, ensuring every surface is wet but not dripping.
- Combine Panko, Parmesan cheese, garlic powder, smoked paprika, and black pepper. Press the strips firmly into the mixture until breading is packed tightly.
- Preheat the oven to 425°F (220°C).
- Place a wire rack over a baking sheet and arrange the fries in a single layer, leaving space between each for airflow.
- Drizzle with extra virgin olive oil and bake for 20 minutes or until golden mahogany and crisp.
- Garnish with chopped fresh parsley before serving.
