Ingredients:

  • 4 large garden tomatoes, seeded and diced
  • 1 medium white onion, finely diced
  • 1 jalapeño pepper, deseeded and minced
  • 1/2 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 1 tbsp red wine vinegar
  • 1/2 tsp sea salt
  • 1/4 tsp ground cumin
  • 1/4 tsp black pepper

Instructions:

  1. Dice the tomatoes, onions, and jalapeños into uniform 1/4-inch pieces. If using large garden tomatoes, slice them in half and gently scoop out the watery seed center with a spoon before dicing to prevent a soupy consistency.
  2. In a large glass mixing bowl, combine the diced onion, jalapeño, and sea salt. Let this mixture sit for 2 minutes to soften the raw bite of the onion and release its natural sugars.
  3. Stir in the ground cumin and black pepper.
  4. Fold in the diced tomatoes and chopped cilantro.
  5. Drizzle the fresh lime juice and red wine vinegar over the top. Toss gently with a spoon until the vegetables are evenly coated but the tomatoes remain intact.
