Ingredients:
- 4 large garden tomatoes, seeded and diced
- 1 medium white onion, finely diced
- 1 jalapeño pepper, deseeded and minced
- 1/2 cup fresh cilantro, chopped
- 2 tbsp fresh lime juice
- 1 tbsp red wine vinegar
- 1/2 tsp sea salt
- 1/4 tsp ground cumin
- 1/4 tsp black pepper
Instructions:
- Dice the tomatoes, onions, and jalapeños into uniform 1/4-inch pieces. If using large garden tomatoes, slice them in half and gently scoop out the watery seed center with a spoon before dicing to prevent a soupy consistency.
- In a large glass mixing bowl, combine the diced onion, jalapeño, and sea salt. Let this mixture sit for 2 minutes to soften the raw bite of the onion and release its natural sugars.
- Stir in the ground cumin and black pepper.
- Fold in the diced tomatoes and chopped cilantro.
- Drizzle the fresh lime juice and red wine vinegar over the top. Toss gently with a spoon until the vegetables are evenly coated but the tomatoes remain intact.
