Ingredients:

  • 4 center-cut salmon fillets (approx. 6 oz each)
  • 15 ml avocado oil
  • 10 g smoked paprika
  • 5 g garlic powder
  • 5 g onion powder
  • 2 g dried oregano
  • 2 g cayenne pepper
  • 45 g unsalted butter, cubed
  • 60 ml high-quality clover honey
  • 15 ml fresh lemon juice
  • 2 cloves garlic, microplaned
  • 0.5 tsp sea salt
  • 0.25 tsp cracked black pepper

Instructions:

  1. Remove salmon from the refrigerator 15 minutes before cooking to temper. Pat the skin and flesh completely dry with paper towels.
  2. In a small bowl, whisk together the smoked paprika, garlic powder, onion powder, dried oregano, and cayenne pepper. Press the flesh side of each fillet firmly into the spice mixture to create a thick crust.
  3. Heat a heavy-bottomed cast iron skillet over medium-high heat with the avocado oil. Once shimmering, place salmon flesh-side down and sear for 2 minutes until a deep mahogany crust forms.
  4. Flip the fillets. Cook 4 minutes until the skin is golden and releases easily from the pan. Immediately add the cubed butter, honey, lemon juice, and microplaned garlic to the pan spaces. As the butter melts and froths, spoon the glaze continuously over the salmon (basting) for 2 minutes.
  5. Remove the skillet from heat when the fish flakes easily with a fork. Allow the fish to rest for 3 minutes before serving.
