Ingredients:
- 2 cups (300g) cherry tomatoes, halved
- ½ cup (15g) fresh basil leaves, torn by hand
- ¼ cup (15g) red onion, finely diced
- 3 tbsp (45ml) extra virgin olive oil
- 1 tbsp (15ml) balsamic vinegar
- 1 clove (5g) garlic, minced
- ½ tsp (3g) sea salt
- ¼ tsp (1g) cracked black pepper
- ½ tsp (2.5ml) honey
Instructions:
- Halve the cherry tomatoes lengthwise and finely dice the red onion. Place both in a large mixing bowl.
- Combine olive oil, balsamic vinegar, minced garlic, salt, pepper, and honey in a small mason jar. Seal tightly and shake vigorously for 30 seconds until emulsified.
- Pour the dressing over the tomatoes and onions and toss gently to coat.
- Fold in the torn basil leaves immediately before serving to prevent oxidation.
