Ingredients:

  • 2 cups (300g) cherry tomatoes, halved
  • ½ cup (15g) fresh basil leaves, torn by hand
  • ¼ cup (15g) red onion, finely diced
  • 3 tbsp (45ml) extra virgin olive oil
  • 1 tbsp (15ml) balsamic vinegar
  • 1 clove (5g) garlic, minced
  • ½ tsp (3g) sea salt
  • ¼ tsp (1g) cracked black pepper
  • ½ tsp (2.5ml) honey

Instructions:

  1. Halve the cherry tomatoes lengthwise and finely dice the red onion. Place both in a large mixing bowl.
  2. Combine olive oil, balsamic vinegar, minced garlic, salt, pepper, and honey in a small mason jar. Seal tightly and shake vigorously for 30 seconds until emulsified.
  3. Pour the dressing over the tomatoes and onions and toss gently to coat.
  4. Fold in the torn basil leaves immediately before serving to prevent oxidation.
