Ingredients:

  • 1 lb Cooked chicken breast, shredded or diced
  • 2 Large Ripe Hass avocados
  • 3 tbsp Freshly squeezed lime juice
  • 1/4 cup Fresh cilantro, finely chopped
  • 1/4 cup Red onion, finely minced
  • 1/2 cup English cucumber, diced
  • 1 tsp Sea salt
  • 1/2 tsp Cracked black pepper
  • 1/2 tsp Garlic powder

Instructions:

  1. Shred or dice your 1 lb of cooked chicken into bite-sized pieces and place them in a large bowl.
  2. Cut the 1/2 cup of English cucumber and 1/4 cup of red onion into small, uniform cubes.
  3. Halve the 2 Hass avocados, remove the pits, and scoop the flesh into a separate small bowl.
  4. Pour the 3 tbsp of lime juice over the avocado immediately.
  5. Use a fork to mash the avocado with the lime juice, 1 tsp sea salt, 1/2 tsp pepper, and 1/2 tsp garlic powder until mostly smooth with a few small chunks.
  6. Fold the avocado mash into the chicken bowl using a spatula.
  7. Toss in the diced cucumber, red onion, and 1/4 cup of chopped cilantro.
  8. Incorporate everything until the chicken is velvety and fully coated.
  9. Divide the mixture evenly into four meal prep containers.
  10. Press a piece of parchment paper or plastic wrap directly onto the surface of the salad before closing the lid to minimize air gaps.
