Ingredients:

  • 1 cup (15g) fresh cilantro, stems removed and roughly chopped
  • 1/4 cup (40g) red onion, finely diced
  • 1 medium (10g) jalapeño, seeded and minced
  • 1 clove (3g) garlic, minced
  • 2 tbsp (30ml) fresh lime juice
  • 1 tsp (2g) lime zest
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (0.5g) ground cumin
  • 1 pinch (1g) granulated sugar

Instructions:

  1. Combine the minced garlic, diced red onion, and lime juice in a mixing bowl and let sit for 2 minutes to mellow the raw edge of the aromatics.
  2. Using a food processor, pulse the jalapeño, salt, cumin, and sugar 3-4 times until coarsely chopped, or hand-mince the jalapeño and stir into the onion mixture.
  3. Gently fold the chopped cilantro and lime zest into the bowl with a spoon until evenly distributed while maintaining the leaf shape.
