Ingredients:
- 1 cup (15g) fresh cilantro, stems removed and roughly chopped
- 1/4 cup (40g) red onion, finely diced
- 1 medium (10g) jalapeño, seeded and minced
- 1 clove (3g) garlic, minced
- 2 tbsp (30ml) fresh lime juice
- 1 tsp (2g) lime zest
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (0.5g) ground cumin
- 1 pinch (1g) granulated sugar
Instructions:
- Combine the minced garlic, diced red onion, and lime juice in a mixing bowl and let sit for 2 minutes to mellow the raw edge of the aromatics.
- Using a food processor, pulse the jalapeño, salt, cumin, and sugar 3-4 times until coarsely chopped, or hand-mince the jalapeño and stir into the onion mixture.
- Gently fold the chopped cilantro and lime zest into the bowl with a spoon until evenly distributed while maintaining the leaf shape.
