Ingredients:
- 2 cups (300g) Roma tomatoes, seeded and roughly chopped
- 1/2 cup (75g) white onion, peeled and diced
- 1 medium (10g) jalapeño, stemmed and minced
- 2 cloves (6g) garlic, smashed
- 1/2 cup (15g) fresh cilantro, tightly packed and chopped
- 2 tbsp (30ml) fresh lime juice
- 1 tsp (2g) lime zest, finely grated
- 1/2 tsp (3g) fine sea salt
- 1/4 tsp (1g) ground cumin
- 1 pinch (1g) granulated sugar
Instructions:
- Place the diced onion and smashed garlic into the food processor. Pulse 3–5 times until finely chopped but not pasted.
- Add the seeded tomatoes and minced jalapeño to the processor. Pulse 3–4 more times until the vegetables are combined in small chunks but still hold their shape.
- Transfer the mixture to a bowl. Fold in the chopped cilantro, lime juice, lime zest, salt, and cumin. Stir gently until the lime juice coats all ingredients.
