Ingredients:

  • 2 cups (300g) Roma tomatoes, seeded and roughly chopped
  • 1/2 cup (75g) white onion, peeled and diced
  • 1 medium (10g) jalapeño, stemmed and minced
  • 2 cloves (6g) garlic, smashed
  • 1/2 cup (15g) fresh cilantro, tightly packed and chopped
  • 2 tbsp (30ml) fresh lime juice
  • 1 tsp (2g) lime zest, finely grated
  • 1/2 tsp (3g) fine sea salt
  • 1/4 tsp (1g) ground cumin
  • 1 pinch (1g) granulated sugar

Instructions:

  1. Place the diced onion and smashed garlic into the food processor. Pulse 3–5 times until finely chopped but not pasted.
  2. Add the seeded tomatoes and minced jalapeño to the processor. Pulse 3–4 more times until the vegetables are combined in small chunks but still hold their shape.
  3. Transfer the mixture to a bowl. Fold in the chopped cilantro, lime juice, lime zest, salt, and cumin. Stir gently until the lime juice coats all ingredients.
