Ingredients:
- 2 lbs ripe heirloom or vine tomatoes
- 1/2 cup red onion
- 1/4 cup fresh basil leaves
- 1 clove garlic
- 1 tsp kosher salt
- 3 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1/2 tsp black pepper
Instructions:
- Place tomato wedges and sliced red onions in a mixing bowl. Sprinkle with 3/4 of the kosher salt, toss gently, and let the mixture sit for 10–15 minutes to draw out natural juices.
- Add the minced garlic and torn basil leaves to the bowl, allowing the garlic to infuse into the tomato juices.
- Drizzle the extra-virgin olive oil and red wine vinegar over the vegetables. Add the black pepper and the remaining pinch of salt, then toss gently using a folding motion until coated in a glossy glaze.
