Ingredients:

  • 2 lbs ripe heirloom or vine tomatoes
  • 1/2 cup red onion
  • 1/4 cup fresh basil leaves
  • 1 clove garlic
  • 1 tsp kosher salt
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1/2 tsp black pepper

Instructions:

  1. Place tomato wedges and sliced red onions in a mixing bowl. Sprinkle with 3/4 of the kosher salt, toss gently, and let the mixture sit for 10–15 minutes to draw out natural juices.
  2. Add the minced garlic and torn basil leaves to the bowl, allowing the garlic to infuse into the tomato juices.
  3. Drizzle the extra-virgin olive oil and red wine vinegar over the vegetables. Add the black pepper and the remaining pinch of salt, then toss gently using a folding motion until coated in a glossy glaze.
