Ingredients:
- 1 lb English cucumber, diced
- 2 cups cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 6 oz feta cheese, crumbled
- 1/2 cup Kalamata olives, pitted and halved
- 1 tsp dried oregano
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp fresh lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Rinse the cucumber and tomatoes. Dice the cucumber into uniform cubes and halve the cherry tomatoes. Note: Uniform sizes ensure every bite has a bit of everything.
- Place the chopped cucumbers and tomatoes in a colander for 2 minutes until the excess surface water drips away.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, and pepper.
- Whisk for about 30 seconds until the mixture looks opaque and thickened.
- Combine the cucumber, tomatoes, red onion, olives, and parsley in a large bowl.
- Pour the dressing over the vegetables and toss gently. Note: Do this before adding the cheese to ensure the veg are well coated.
- Fold in the crumbled feta and dried oregano last.
- Use a spatula to stir once or twice until the feta is distributed but still in distinct chunks.
