Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1 tbsp ground cinnamon
- 1/2 tsp salt
- 1/2 cup neutral oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 3 medium Granny Smith apples, peeled and diced into 1/2 inch cubes
- 1/4 cup walnut pieces
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan with butter or non-stick spray, lining the bottom with parchment paper.
- Peel and core the Granny Smith apples, dicing them into uniform 1/2 inch cubes.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt until the color is uniform.
- Create a well in the center of the dry ingredients and pour in the neutral oil, eggs, vanilla extract, and whole milk.
- Using a spatula, gently fold the mixture together until just combined; do not over-mix to ensure a tender crumb.
- Gently fold in the diced apples and walnut pieces until the fruit is evenly coated in batter.
- Transfer the batter into the prepared baking pan and smooth the top with a spatula.
- Bake on the center rack for 40–45 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Let the cake rest in the pan for 10 minutes before transferring to a wire rack to cool completely.
