Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tbsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup neutral oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 3 medium Granny Smith apples, peeled and diced into 1/2 inch cubes
  • 1/4 cup walnut pieces

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan with butter or non-stick spray, lining the bottom with parchment paper.
  2. Peel and core the Granny Smith apples, dicing them into uniform 1/2 inch cubes.
  3. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt until the color is uniform.
  4. Create a well in the center of the dry ingredients and pour in the neutral oil, eggs, vanilla extract, and whole milk.
  5. Using a spatula, gently fold the mixture together until just combined; do not over-mix to ensure a tender crumb.
  6. Gently fold in the diced apples and walnut pieces until the fruit is evenly coated in batter.
  7. Transfer the batter into the prepared baking pan and smooth the top with a spatula.
  8. Bake on the center rack for 40–45 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  9. Let the cake rest in the pan for 10 minutes before transferring to a wire rack to cool completely.
