Ingredients:
- 1.5 lbs heirloom tomatoes
- 1/2 cup red onion
- 1/4 cup fresh basil leaves
- 1 cup English cucumber
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 clove garlic
- 1/2 tsp dried oregano
- 4 oz feta cheese
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions:
- Slice the heirloom tomatoes into uniform wedges. Thinly slice the red onion; optionally soak the onion slices in ice water for 5 minutes and pat dry to remove harshness.
- In a small bowl or jar, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, and dried oregano until the dressing is emulsified and thickened.
- Combine the tomato wedges, diced English cucumber, and sliced red onions in a large mixing bowl.
- Drizzle the prepared dressing over the vegetables and toss gently with a rubber spatula to avoid bruising the tomatoes.
- Fold in the crumbled feta cheese and chiffonade basil leaves.
- Season with kosher salt and cracked black pepper immediately before serving to prevent the salad from becoming watery.
