Ingredients:

  • 1.5 lbs heirloom tomatoes
  • 1/2 cup red onion
  • 1/4 cup fresh basil leaves
  • 1 cup English cucumber
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 clove garlic
  • 1/2 tsp dried oregano
  • 4 oz feta cheese
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Slice the heirloom tomatoes into uniform wedges. Thinly slice the red onion; optionally soak the onion slices in ice water for 5 minutes and pat dry to remove harshness.
  2. In a small bowl or jar, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, and dried oregano until the dressing is emulsified and thickened.
  3. Combine the tomato wedges, diced English cucumber, and sliced red onions in a large mixing bowl.
  4. Drizzle the prepared dressing over the vegetables and toss gently with a rubber spatula to avoid bruising the tomatoes.
  5. Fold in the crumbled feta cheese and chiffonade basil leaves.
  6. Season with kosher salt and cracked black pepper immediately before serving to prevent the salad from becoming watery.
