- 1/2 cup marinara sauce
- 1 cup shredded mozzarella cheese

Instructions:
- Set up a dredging station with three shallow bowls: one containing flour and salt, one with beaten eggs, and one with the combined Panko, Parmesan, garlic powder, Italian seasoning, and red pepper flakes.
- Coat each eggplant slice by dipping it first into the flour, then the beaten eggs, and finally pressing it firmly into the Panko mixture until fully coated.
- Arrange the eggplant bites in a single layer in the air fryer basket, ensuring they are not crowded, and spray generously with cooking oil.
- Cook at 400°F (200°C) for 8-10 minutes, flipping halfway through, until the crust is mahogany-colored and firm.
- Top each crispy bite with 1 teaspoon of marinara sauce and a pinch of shredded mozzarella cheese.
- Return to the air fryer or oven for 2-3 minutes, just until the cheese is bubbly and golden.
- Garnish with fresh basil leaves before serving.
