Ingredients:
- 2 ½ cups All-purpose flour (312g)
- 1 cup Old-fashioned oats, blended to a fine powder (80g)
- 1 tsp Baking soda
- 1 tsp Baking powder
- ½ tsp Sea salt
- 1 cup Unsalted butter, melted and cooled (226g)
- 1 cup Dark brown sugar, packed (200g)
- ½ cup Granulated sugar (100g)
- 2 large Eggs, room temperature
- 1 tbsp Pure vanilla extract
- 2 cups Semi-sweet or Dark chocolate chips (340g)
- 1 cup Walnuts, finely chopped (117g)
- 1 bar High-quality dark chocolate, roughly chopped (100g)
Instructions:
- Pulse 1 cup old-fashioned oats in a blender until they reach a fine, flour like consistency.
- Combine the oat flour, 2 ½ cups all purpose flour, baking soda, baking powder, and salt in a bowl.
- Stir the 1 cup melted, cooled butter with the dark brown and granulated sugars until the mixture looks like wet sand.
- Beat in the 2 eggs and 1 tbsp vanilla extract until the mixture is smooth and slightly pale.
- Gradually fold the dry ingredients into the wet until just a few streaks of flour remain.
- Chop the 1 cup walnuts and the dark chocolate bar until you have a mix of large and small chunks.
- Stir in the 2 cups chocolate chips, walnuts, and chopped chocolate until evenly distributed through the dough.
- Form dough into rounded tablespoons (about 3 tbsp each) and place on a lined sheet.
- Heat oven to 350°F (180°C) and bake for 12 minutes until the edges are golden and the centers look slightly underdone.
- Let the cookies sit on the hot pan for 5 minutes until they firm up enough to move.
