Ingredients:

  • 450g ripe avocados, diced
  • 300g cherry tomatoes, halved
  • 300g English cucumber, deseeded and diced
  • 50g red onion, finely diced
  • 15g fresh cilantro, chopped
  • 45ml extra virgin olive oil
  • 30ml fresh lime juice
  • 15ml apple cider vinegar
  • 5ml honey
  • 3g sea salt
  • 1g cracked black pepper
  • 1g red pepper flakes

Instructions:

  1. Slice the cucumber lengthwise, scoop out the watery seeds with a spoon, and dice into 1-inch cubes.
  2. Finely dice the red onion and halve the cherry tomatoes.
  3. In a jar, combine the olive oil, remaining lime juice, vinegar, honey, salt, and pepper.
  4. Shake the jar vigorously for 30 seconds until the dressing is emulsified, opaque, and thickened.
  5. Dice the avocados into chunks similar in size to the cucumber and immediately place them in a bowl, drizzling with 1 tablespoon of the lime juice to prevent oxidation.
  6. Add the tomatoes, cucumber, and onion to the bowl with the avocado.
  7. Pour the dressing over the ingredients.
  8. Using a silicone spatula, gently fold the ingredients from the bottom up to avoid mashing the avocado.
  9. Gently fold in the fresh cilantro last to prevent bruising the leaves.
