Ingredients:
- 2 pints (500g) cherry tomatoes, halved
- 1/4 cup (15g) red onion, finely diced
- 1 small (50g) English cucumber, diced
- 3 tbsp (45ml) extra virgin olive oil
- 1 tbsp (15ml) red wine vinegar
- 1 clove (5g) garlic, minced
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
- 1 tsp (5ml) honey
- 1/4 cup (10g) fresh basil, torn leaves
- 2 tbsp (10g) fresh parsley, chopped
Instructions:
- Slice the cherry tomatoes lengthwise. Dice the red onion and cucumber into uniform pieces roughly the size of a tomato half.
- In a small jar or bowl, combine the olive oil, red wine vinegar, honey, minced garlic, salt, and pepper. Shake vigorously or whisk until the mixture is thickened and glossy.
- Place the tomatoes, onions, and cucumbers in a large bowl. Pour the dressing over the top and fold gently with a spoon until every tomato is coated.
- Stir in the fresh basil and parsley at the very last second to keep the herbs vivid green.
