Ingredients:

  • 2 pints (500g) cherry tomatoes, halved
  • 1/4 cup (15g) red onion, finely diced
  • 1 small (50g) English cucumber, diced
  • 3 tbsp (45ml) extra virgin olive oil
  • 1 tbsp (15ml) red wine vinegar
  • 1 clove (5g) garlic, minced
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper
  • 1 tsp (5ml) honey
  • 1/4 cup (10g) fresh basil, torn leaves
  • 2 tbsp (10g) fresh parsley, chopped

Instructions:

  1. Slice the cherry tomatoes lengthwise. Dice the red onion and cucumber into uniform pieces roughly the size of a tomato half.
  2. In a small jar or bowl, combine the olive oil, red wine vinegar, honey, minced garlic, salt, and pepper. Shake vigorously or whisk until the mixture is thickened and glossy.
  3. Place the tomatoes, onions, and cucumbers in a large bowl. Pour the dressing over the top and fold gently with a spoon until every tomato is coated.
  4. Stir in the fresh basil and parsley at the very last second to keep the herbs vivid green.
