Instructions:

  1. Seed the Roma tomatoes by slicing them in half and scooping out the watery centers, then dice into uniform 1/4 inch cubes.
  2. Finely mince the white onion and jalapeño until they are small enough to distribute evenly.
  3. In a medium mixing bowl, combine the diced tomatoes, onion, jalapeño, and chopped cilantro.
  4. Pour the fresh lime juice over the mixture and sprinkle in the sea salt, ground cumin, and black pepper.
  5. Gently fold the ingredients with a spoon to coat the vegetables without crushing the tomato walls.
  6. Allow the salsa to sit at room temperature for 5 to 10 minutes to let the flavors meld and the salt draw out the natural juices.
