Ingredients:
- 4 large Roma tomatoes, seeded and diced (approx. 1 lb / 450g)
- 1/2 cup white onion, finely diced (75g)
- 2 jalapeño peppers, minced (approx. 20g)
- 1/2 cup fresh cilantro, chopped (15g)
- 2 tbsp fresh lime juice (30ml)
- 1 tsp sea salt (6g)
- 1/2 tsp ground cumin (1g)
- 1/4 tsp cracked black pepper (1g)
Instructions:
- Seed the Roma tomatoes by scooping out the watery core. Dice the tomatoes, onion, and jalapeños into uniform 1/4-inch pieces to ensure a balanced distribution of flavors.
- In a medium mixing bowl, combine the diced tomatoes and onions. Sprinkle the sea salt and ground cumin over the vegetables, toss gently, and let sit for 2 minutes to draw out excess moisture.
- Fold in the minced jalapeños, chopped cilantro, and fresh lime juice. Stir gently with a spoon to avoid bruising the cilantro, then taste and adjust lime juice if needed.
