  • 1/4 tsp ground cumin
  • 1/4 tsp black pepper

Instructions:

  1. Dice the Roma tomatoes into uniform 1/4 inch pieces, scooping out large, watery seed pockets with a spoon before dicing. Finely mince the onion, garlic, and jalapeño.
  2. Combine the diced tomatoes, onion, jalapeño, and garlic in a mixing bowl. Stir gently using a folding motion to avoid crushing the tomato walls.
  3. Drizzle fresh lime juice over the vegetables and sprinkle in the salt, cumin, and black pepper. Fold in the chopped cilantro last.
  4. Let the mixture sit for 5 minutes at room temperature to allow the salt to draw out the flavors.
