Instructions:
- Dice the Roma tomatoes into uniform 1/4 inch pieces, scooping out large, watery seed pockets with a spoon before dicing. Finely mince the onion, garlic, and jalapeño.
- Combine the diced tomatoes, onion, jalapeño, and garlic in a mixing bowl. Stir gently using a folding motion to avoid crushing the tomato walls.
- Drizzle fresh lime juice over the vegetables and sprinkle in the salt, cumin, and black pepper. Fold in the chopped cilantro last.
- Let the mixture sit for 5 minutes at room temperature to allow the salt to draw out the flavors.
