Ingredients:
- 1/4 cup extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, finely minced
- 1 tbsp fresh parsley, finely chopped
- 1 tsp fresh oregano, finely chopped
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 1/8 tsp red pepper flakes
Instructions:
- Mince the garlic. Chop until it reaches a paste like consistency to avoid large chunks that burn. Note: This ensures an even flavor spread.
- Chop the parsley and oregano. Finely dice them to release the oils.
- Pour olive oil and lemon juice into the bowl.
- Whisk the oil and lemon for 30 seconds. Continue until the mix looks cloudy and thickened.
- Fold in the minced garlic and chopped herbs.
- Stir in the salt, pepper, and red pepper flakes. Mix until herbs are suspended evenly.
- Place tuna steaks in a bag and pour in the Garlic Herb Tuna Marinade.
- Massage the bag to coat the fish.
- Chill in the fridge for 30 to 60 minutes. Do not exceed 2 hours.
- Remove tuna and pat slightly dry. Sear on high heat for 2-3 mins per side until a mahogany crust forms.
