Ingredients:

  • 1/4 cup extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, finely minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh oregano, finely chopped
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1/8 tsp red pepper flakes

Instructions:

  1. Mince the garlic. Chop until it reaches a paste like consistency to avoid large chunks that burn. Note: This ensures an even flavor spread.
  2. Chop the parsley and oregano. Finely dice them to release the oils.
  3. Pour olive oil and lemon juice into the bowl.
  4. Whisk the oil and lemon for 30 seconds. Continue until the mix looks cloudy and thickened.
  5. Fold in the minced garlic and chopped herbs.
  6. Stir in the salt, pepper, and red pepper flakes. Mix until herbs are suspended evenly.
  7. Place tuna steaks in a bag and pour in the Garlic Herb Tuna Marinade.
  8. Massage the bag to coat the fish.
  9. Chill in the fridge for 30 to 60 minutes. Do not exceed 2 hours.
  10. Remove tuna and pat slightly dry. Sear on high heat for 2-3 mins per side until a mahogany crust forms.
