Ingredients:

  • 2 (6 oz / 170g) Ahi tuna steaks, 1-inch thick
  • 2 tbsp (30ml) soy sauce
  • 1 tbsp (15ml) toasted sesame oil
  • 1 tbsp (15ml) fresh lime juice
  • 1 tsp (5g) freshly grated ginger
  • 1 clove (3g) garlic, microplaned
  • 2 tbsp (16g) black and white sesame seeds
  • 1 tbsp (15ml) avocado oil
  • 1 large (7 oz / 200g) ripe avocado, diced into 1/4 pieces
  • 1/4 cup (15g) red onion, finely minced
  • 2 tbsp (30ml) fresh cilantro, chopped
  • 1 tbsp (15ml) lime juice
  • 1 tsp (5ml) extra virgin olive oil
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. In a small bowl, whisk together the soy sauce, sesame oil, lime juice, ginger, and garlic.
  2. Pat the tuna steaks completely dry with paper towels, brush the marinade generously over all sides, and press the steaks into the sesame seeds to create an even coating on the top and bottom.
  3. Heat a grill or cast iron pan over high heat until it begins to smoke, then add the avocado oil.
  4. Place the tuna steaks on the grill and sear for exactly 60–90 seconds per side for a rare center. Remove from heat immediately.
  5. While the tuna rests for 2 minutes, gently toss the diced avocado, red onion, cilantro, lime juice, olive oil, salt, and pepper in a bowl.
  6. Slice the tuna into 1/2-inch thick strips and spoon the avocado salsa generously over the top.
