Ingredients:

  • 4 chicken breasts
  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes

Instructions:

  1. Combine the olive oil, lemon juice, and apple cider vinegar in a bowl. Whisk vigorously until the liquids are fully integrated.
  2. Stir in the minced garlic, salt, pepper, and all dried herbs to ensure equal distribution of seasoning.
  3. Place chicken breasts in a Ziploc bag or airtight container and pour the marinade over the top. Squeeze out as much air as possible before sealing.
  4. Let the chicken marinate in the refrigerator for at least 30 minutes (up to 6 hours).
  5. Preheat grill or oven. For grilling, cook over medium high heat for 6-7 minutes per side. For baking, roast at 400°F (200°C) for 15-20 minutes.
  6. Cook until the meat is firm and the edges are golden brown.
  7. Remove chicken when the internal temperature reaches 165°F (74°C).
  8. Let the meat rest for 5 minutes before slicing.
