Ingredients:
- 4 chicken breasts
- 1/4 cup extra virgin olive oil
- 3 tbsp fresh lemon juice
- 1 tbsp apple cider vinegar
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- 1/4 tsp red pepper flakes
Instructions:
- Combine the olive oil, lemon juice, and apple cider vinegar in a bowl. Whisk vigorously until the liquids are fully integrated.
- Stir in the minced garlic, salt, pepper, and all dried herbs to ensure equal distribution of seasoning.
- Place chicken breasts in a Ziploc bag or airtight container and pour the marinade over the top. Squeeze out as much air as possible before sealing.
- Let the chicken marinate in the refrigerator for at least 30 minutes (up to 6 hours).
- Preheat grill or oven. For grilling, cook over medium high heat for 6-7 minutes per side. For baking, roast at 400°F (200°C) for 15-20 minutes.
- Cook until the meat is firm and the edges are golden brown.
- Remove chicken when the internal temperature reaches 165°F (74°C).
- Let the meat rest for 5 minutes before slicing.
