Ingredients:

  • 4 medium Roma tomatoes, seeded and roughly chopped (approx. 450g)
  • 3 jalapeño peppers, stems removed (approx. 55g)
  • 1/4 cup red onion, roughly chopped (approx. 40g)
  • 2 cloves garlic, peeled (approx. 6g)
  • 2 tbsp fresh lime juice (30ml)
  • 1 tsp lime zest (2g)
  • 1/2 cup fresh cilantro, loosely packed (approx. 20g)
  • 1/2 tsp fine sea salt (3g)
  • 1/4 tsp ground cumin (1g)

Instructions:

  1. Place the chopped red onion, garlic, and jalapeños into the food processor. Pulse 3-5 times until the pieces are finely minced but not a paste.
  2. Add the seeded Roma tomatoes, lime zest, salt, and cumin. Pulse carefully 2-3 more times until the tomatoes are broken down into small chunks.
  3. Transfer the mixture to a bowl and fold in the fresh lime juice and chopped cilantro by hand.
