Ingredients:

  • 2 lbs assorted heirloom tomatoes
  • 1/2 small red onion
  • 1/4 cup fresh basil leaves
  • 2 tbsp fresh mint leaves
  • 1/2 tsp flaky sea salt
  • 1/4 tsp freshly cracked black pepper
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 clove garlic
  • 1 tsp honey

Instructions:

  1. Slice the heirloom tomatoes into uniform wedges or thick rounds and arrange them on a platter. Scatter the thinly sliced red onions across the top.
  2. In a small bowl or jar, combine the olive oil, lemon juice, lemon zest, minced garlic, and honey. Whisk vigorously or shake until the mixture is creamy and opaque.
  3. Drizzle the emulsion evenly over the tomatoes and onions. Immediately sprinkle with flaky sea salt and black pepper, then finish by scattering the torn basil and mint over the top. Serve instantly.
