Ingredients:
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp fresh lemon zest
- 1 clove garlic, minced
- 1 tbsp coarse ground black pepper
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 4 6 oz ahi tuna steaks
Instructions:
- Pat the tuna steaks (170g each) bone dry with paper towels. Note: Any surface moisture will steam the fish instead of searing it.
- Whisk 30ml olive oil, 15ml lemon juice, 5ml lemon zest, and one minced garlic clove in a bowl.
- Brush the marinade over all sides of the tuna. Let it sit at room temperature for 10–15 minutes.
- Preheat your grill or cast iron pan to high heat. Wait until the pan sizzles when a drop of water hits it.
- Combine 5ml salt, 15ml coarse black pepper, 5ml garlic powder, and 5ml onion powder in a shallow dish.
- Press the tuna steaks firmly into the rub to create a thick coating.
- Place steaks on the grill. Sear for 3–4 minutes per side until a mahogany crust forms.
- Look for a thin grey band (about 6mm) appearing toward the center of the steak.
- Remove the Lemon Pepper Grilled Tuna from heat.
- Let the steaks rest on a warm plate for 5 minutes. Note: This stops the juices from running out the moment you slice it.
