Ingredients:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh lemon zest
  • 1 clove garlic, minced
  • 1 tbsp coarse ground black pepper
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 6 oz ahi tuna steaks

Instructions:

  1. Pat the tuna steaks (170g each) bone dry with paper towels. Note: Any surface moisture will steam the fish instead of searing it.
  2. Whisk 30ml olive oil, 15ml lemon juice, 5ml lemon zest, and one minced garlic clove in a bowl.
  3. Brush the marinade over all sides of the tuna. Let it sit at room temperature for 10–15 minutes.
  4. Preheat your grill or cast iron pan to high heat. Wait until the pan sizzles when a drop of water hits it.
  5. Combine 5ml salt, 15ml coarse black pepper, 5ml garlic powder, and 5ml onion powder in a shallow dish.
  6. Press the tuna steaks firmly into the rub to create a thick coating.
  7. Place steaks on the grill. Sear for 3–4 minutes per side until a mahogany crust forms.
  8. Look for a thin grey band (about 6mm) appearing toward the center of the steak.
  9. Remove the Lemon Pepper Grilled Tuna from heat.
  10. Let the steaks rest on a warm plate for 5 minutes. Note: This stops the juices from running out the moment you slice it.
