Ingredients:
- 1 lb lean ground turkey (93% lean)
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, finely minced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp dried oregano
- 1 tbsp fresh lemon juice
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
- 1 tbsp olive oil
- 6 whole wheat or brioche buns
- 1 cup homemade tzatziki or Greek yogurt
- 1 cup baby spinach or arugula
- 1 sliced cucumber
- 1 sliced red onion
Instructions:
- Combine the ground turkey, crumbled feta, minced onion, garlic, parsley, oregano, lemon juice, salt, and pepper in a large bowl. Mix until just combined to avoid a rubbery texture.
- Shape the mixture into 6 equal patties, about 3/4 inch thick.
- Heat olive oil in a skillet or grill over medium high heat until it shimmers.
- Place the patties in the pan. Sear for 4–5 minutes per side until the exterior is mahogany brown.
- Check the internal temperature with a thermometer. Cook until it hits exactly 165°F (74°C).
- Remove the patties from the heat and let them rest for 2 minutes.
- Toast your buns in the same pan or a toaster until golden brown.
- Spread a generous layer of tzatziki on the bottom bun.
- Place the Mediterranean Turkey Burger patty on top.
- Layer with fresh spinach, cucumber slices, and red onion.
