Ingredients:

  • 1 lb lean ground turkey (93% lean)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely minced
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp olive oil
  • 6 whole wheat or brioche buns
  • 1 cup homemade tzatziki or Greek yogurt
  • 1 cup baby spinach or arugula
  • 1 sliced cucumber
  • 1 sliced red onion

Instructions:

  1. Combine the ground turkey, crumbled feta, minced onion, garlic, parsley, oregano, lemon juice, salt, and pepper in a large bowl. Mix until just combined to avoid a rubbery texture.
  2. Shape the mixture into 6 equal patties, about 3/4 inch thick.
  3. Heat olive oil in a skillet or grill over medium high heat until it shimmers.
  4. Place the patties in the pan. Sear for 4–5 minutes per side until the exterior is mahogany brown.
  5. Check the internal temperature with a thermometer. Cook until it hits exactly 165°F (74°C).
  6. Remove the patties from the heat and let them rest for 2 minutes.
  7. Toast your buns in the same pan or a toaster until golden brown.
  8. Spread a generous layer of tzatziki on the bottom bun.
  9. Place the Mediterranean Turkey Burger patty on top.
  10. Layer with fresh spinach, cucumber slices, and red onion.
