Ingredients:

  • 1 lb lean ground turkey
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup fresh spinach, finely chopped
  • 1 large egg, beaten
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp dried mint
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. In a large bowl, combine the beaten egg, minced garlic, oregano, dried mint, salt, pepper, and olive oil. Whisk until emulsified.
  2. Fold in the ground turkey, crumbled feta, and finely chopped spinach. Mix gently with hands until just combined; do not overwork the meat.
  3. Preheat the oven to 400°F (200°C) or the air fryer to 375°F (190°C).
  4. Scoop approximately 2 tablespoons of the mixture and roll into 1.25-inch balls.
  5. For oven: Place on a parchment-lined sheet and bake for 18–20 minutes. For air fryer: Place in the basket and cook for 10–12 minutes. Ensure meatballs reach an internal temperature of 165°F (74°C).
  6. While the meatballs are still hot, drizzle with fresh lemon juice and sprinkle with lemon zest and chopped parsley.
