Ingredients:
- 1 lb lean ground turkey
- 1/2 cup feta cheese, crumbled
- 1/2 cup fresh spinach, finely chopped
- 1 large egg, beaten
- 3 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp dried mint
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 2 tbsp fresh parsley, chopped
Instructions:
- In a large bowl, combine the beaten egg, minced garlic, oregano, dried mint, salt, pepper, and olive oil. Whisk until emulsified.
- Fold in the ground turkey, crumbled feta, and finely chopped spinach. Mix gently with hands until just combined; do not overwork the meat.
- Preheat the oven to 400°F (200°C) or the air fryer to 375°F (190°C).
- Scoop approximately 2 tablespoons of the mixture and roll into 1.25-inch balls.
- For oven: Place on a parchment-lined sheet and bake for 18–20 minutes. For air fryer: Place in the basket and cook for 10–12 minutes. Ensure meatballs reach an internal temperature of 165°F (74°C).
- While the meatballs are still hot, drizzle with fresh lemon juice and sprinkle with lemon zest and chopped parsley.
