Ingredients:
- 3/4 cup extra-virgin olive oil
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp sea salt
- 1 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 3 medium Granny Smith apples, diced
- 2 tbsp granulated sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform or round cake pan and line the bottom with parchment paper.
- In a large bowl, whisk together the olive oil and 1 cup of granulated sugar until well combined.
- Add the eggs one at a time, whisking vigorously after each addition until the batter is pale and slightly aerated.
- Stir in the whole milk and vanilla extract.
- Sift the all-purpose flour, baking powder, sea salt, ground cinnamon, and ground cardamom directly into the wet ingredients. Fold gently with a spatula until flour streaks disappear, being careful not to overmix.
- Fold in the diced Granny Smith apples until evenly distributed throughout the batter.
- Pour the batter into the prepared pan and smooth the surface with a spatula.
- In a small bowl, mix 2 tbsp granulated sugar, 1/2 tsp cinnamon, and 1/4 tsp ginger. Sprinkle this mixture evenly across the top of the cake.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the edges are deep golden brown.
