Ingredients:

  • 3/4 cup extra-virgin olive oil
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 3 medium Granny Smith apples, diced
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform or round cake pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the olive oil and 1 cup of granulated sugar until well combined.
  3. Add the eggs one at a time, whisking vigorously after each addition until the batter is pale and slightly aerated.
  4. Stir in the whole milk and vanilla extract.
  5. Sift the all-purpose flour, baking powder, sea salt, ground cinnamon, and ground cardamom directly into the wet ingredients. Fold gently with a spatula until flour streaks disappear, being careful not to overmix.
  6. Fold in the diced Granny Smith apples until evenly distributed throughout the batter.
  7. Pour the batter into the prepared pan and smooth the surface with a spatula.
  8. In a small bowl, mix 2 tbsp granulated sugar, 1/2 tsp cinnamon, and 1/4 tsp ginger. Sprinkle this mixture evenly across the top of the cake.
  9. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the edges are deep golden brown.
