Ingredients:
- 4 (6 oz / 170g) sea bass fillets, skin-on
- 1 tsp (5g) kosher salt
- ½ tsp (2g) freshly ground black pepper
- 2 tbsp (30ml) extra virgin olive oil
- 3 tbsp (42g) unsalted butter
- 4 cloves (12g) garlic, minced
- 1 tsp (2g) dried oregano
- 1 tbsp (15ml) fresh lemon juice
- 2 tbsp (8g) fresh parsley, finely chopped
Instructions:
- Pat the sea bass fillets extremely dry with paper towels on both sides. Note: Any dampness will stop the skin from crisping.
- Season both sides generously with salt and pepper.
- Heat 1 tbsp (15ml) of olive oil in the skillet over medium high heat until it shimmers.
- Place the Mediterranean Sea Bass fillets skin side down.
- Press firmly with a spatula for 10 seconds. Cook undisturbed for 4-5 minutes until the skin is a deep golden brown and releases easily from the pan.
- Flip the fillets.
- Immediately add the remaining 1 tbsp (15ml) of oil, the butter, minced garlic, and oregano.
- Tilt the pan and use a spoon to continuously pour the bubbling garlic butter over the fish for 2-3 minutes.
- Remove the pan from the heat.
- Stir in the fresh lemon juice and parsley. Spoon the remaining pan sauce over the fish and serve.
