Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup buttermilk, room temperature
- 3 medium ripe pears, peeled and diced
- 1 tsp ground cinnamon
- 1 cup crème fraîche, chilled
- 2 tbsp powdered sugar
- 1 tsp vanilla bean paste
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- Beat the softened butter and granulated sugar on medium-high until pale and fluffy, about 3 minutes.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- On low speed, alternate adding the dry ingredients and buttermilk, beginning and ending with the flour mixture.
- Fold in the diced pears and ground cinnamon until evenly distributed.
- Pour batter into the prepared pan and bake for 50 minutes or until a toothpick comes out clean.
- While cake cools, whip the chilled crème fraîche with powdered sugar and vanilla bean paste until light and fluffy.
