Ingredients:
- 1 lb Ahi Tuna steaks
- 2 tbsp coarse ground black pepper
- 1 tbsp white sesame seeds
- 1 tbsp black sesame seeds
- 1/2 tsp garlic powder
- 1/2 tsp ground ginger
- 1 tsp kosher salt
- 1/4 cup soy sauce
- 1 tbsp rice vinegar
- 1 tsp freshly grated ginger
- 1 tsp honey
- 1 tsp toasted sesame oil
- 2 tbsp neutral oil
Instructions:
- Pat the tuna steaks completely dry with paper towels to ensure a proper sear.
- In a shallow bowl, combine black pepper, white sesame seeds, black sesame seeds, garlic powder, ground ginger, and salt.
- Press each side of the tuna steaks firmly into the pepper mixture until the coating is embedded into the flesh.
- Heat a cast iron skillet over high heat with neutral oil until it begins to shimmer and wisps of smoke appear.
- Carefully place tuna in the pan and sear for exactly 60 seconds per side.
- Using tongs, hold the steaks on their sides for 15–30 seconds each to seal the edges, then remove from heat.
- While the tuna rests for 2 minutes, whisk together soy sauce, rice vinegar, grated ginger, honey, and toasted sesame oil in a small bowl.
- Slice the tuna into 1/2-inch thick rounds using a sharp chef's knife.
- Arrange slices in a fan pattern and drizzle with the ginger sauce or serve as a side dipping sauce.
