Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 2 tsp (10g) ground cinnamon
- 1 tsp (5g) pumpkin pie spice
- 1/2 cup (115g) unsalted butter, melted and cooled
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) light brown sugar, packed
- 3 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 can (15 oz / 425g) pumpkin puree
- 1/4 cup (60ml) vegetable oil
- 4 oz (115g) cream cheese, softened
- 2 tbsp (30g) unsalted butter, softened
- 1 cup (120g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) milk
Instructions:
- Preheat oven to 350°F (175°C). Thoroughly grease a 10-12 cup Bundt pan with butter or non-stick spray and dust with flour, tapping out the excess.
- In a medium bowl, sift together the all-purpose flour, baking soda, salt, cinnamon, and pumpkin pie spice.
- In a large bowl, beat the melted butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, then mix in the vanilla extract, vegetable oil, and pumpkin puree until the mixture is smooth and pale.
- Gradually fold in the sifted dry ingredients using a spatula until just combined; do not overmix.
- Pour batter into the prepared pan and bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for exactly 10 minutes before inverting it onto a wire rack.
- Whisk together softened cream cheese, softened butter, powdered sugar, vanilla extract, and milk until smooth, then glaze the cooled cake.
