- 0.5 cup (125g) pumpkin purée
- 1 tsp (5g) pumpkin pie spice
- 1 tsp (5ml) lemon juice
Instructions:
- In a medium bowl, whisk together the whole wheat pastry flour, coconut sugar, baking soda, salt, ground cinnamon, ground ginger, and ground cloves.
- Beat the softened unsalted butter until creamy, then incorporate eggs one at a time. Stir in 1 cup of pumpkin purée and vanilla extract until smooth.
- Slowly fold the dry ingredients into the wet mixture, stirring only until no flour streaks remain.
- Press the pumpkin cake batter evenly into the bottom of a lined 9-inch springform pan.
- In a separate mixing bowl, beat the softened cream cheese and maple syrup until velvety and lump-free.
- Mix in the plain Greek yogurt and lemon juice until combined.
- Incorporate the remaining 0.5 cup of pumpkin purée, 2 eggs, and pumpkin pie spice into the cheesecake mixture.
- Pour the cheesecake layer over the pumpkin sponge base, smoothing the top with a spatula.
