Ingredients:
- 1 cup (225g) unsalted butter, softened to room temperature
- 1 ½ cups (300g) granulated sugar
- 3 large (150g) eggs, room temperature
- 1 cup (245g) canned pumpkin puree
- ½ cup (120g) sour cream, room temperature
- 3 cups (375g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 tsp (5g) ground cinnamon
- 1 tsp (2g) ground ginger
- ½ tsp (1g) ground nutmeg
- ¼ tsp (0.5g) ground cloves
Instructions:
- Preheat your oven to 325°F (163°C). Grease a 9x5 inch loaf pan with butter and line the bottom with parchment paper.
- In a large bowl, beat the softened butter and granulated sugar together until the mixture looks pale and fluffy (about 3 minutes).
- Add the eggs one at a time, beating well after each addition.
- Stir in the pumpkin puree and sour cream until the batter is smooth and velvety.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- Slowly add the flour mixture to the wet ingredients. Stir with a spatula just until no streaks of flour remain.
- Pour the batter into the prepared pan and bake for 60-65 minutes, or until the top is mahogany-brown and a toothpick inserted into the center comes out clean.
