Ingredients:
- 1.5 cups (225g) red onion, finely diced
- 0.5 tsp (3g) kosher salt
- 3 tbsp (45ml) fresh lime juice
- 1 tbsp (15ml) apple cider vinegar
- 1 tsp (5ml) lime zest
- 0.5 cup (15g) fresh cilantro, chopped
- 1 medium (50g) jalapeño, seeded and minced
- 1 clove (3g) garlic, grated or pressed
- 0.25 tsp (1.5g) cracked black pepper
Instructions:
- Place the diced red onion in a glass bowl and sprinkle with salt. Toss well and let it sit for 5 minutes to draw out sulfurous compounds.
- Pour in the lime juice, vinegar, and lime zest. Stir until the onions are fully submerged and marinate in the refrigerator for at least 30 minutes.
- Fold in the minced jalapeño, grated garlic, and chopped cilantro. Season with black pepper and stir gently.
