Ingredients:

  • 1.5 cups (225g) red onion, finely diced
  • 0.5 tsp (3g) kosher salt
  • 3 tbsp (45ml) fresh lime juice
  • 1 tbsp (15ml) apple cider vinegar
  • 1 tsp (5ml) lime zest
  • 0.5 cup (15g) fresh cilantro, chopped
  • 1 medium (50g) jalapeño, seeded and minced
  • 1 clove (3g) garlic, grated or pressed
  • 0.25 tsp (1.5g) cracked black pepper

Instructions:

  1. Place the diced red onion in a glass bowl and sprinkle with salt. Toss well and let it sit for 5 minutes to draw out sulfurous compounds.
  2. Pour in the lime juice, vinegar, and lime zest. Stir until the onions are fully submerged and marinate in the refrigerator for at least 30 minutes.
  3. Fold in the minced jalapeño, grated garlic, and chopped cilantro. Season with black pepper and stir gently.
