Ingredients:

  • 1 large head of garlic (approx. 50g)
  • 1 teaspoon extra virgin olive oil (4.5g)
  • 1 pinch flaky sea salt (0.5g)
  • 0.75 cup high-quality mayonnaise (170g)
  • 1 tablespoon fresh lemon juice (15g)
  • 0.5 teaspoon Dijon mustard (3g)
  • 0.25 teaspoon sea salt (1.5g)
  • 1 pinch cracked black pepper (0.1g)

Instructions:

  1. Preheat your oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves, drizzle with the 4.5g of oil, sprinkle with a pinch of flaky sea salt, and wrap it tightly in foil. Bake for 45 minutes until soft and golden.
  2. Cool the garlic for 10 minutes, then squeeze the cloves from their skins into a bowl and mash into a smooth paste.
  3. Whisk the mayonnaise, lemon juice, Dijon mustard, salt, and pepper into the garlic paste until the mixture is thick, glossy, and fully emulsified.
