Ingredients:
- 1 large head of garlic (approx. 50g)
- 1 teaspoon extra virgin olive oil (4.5g)
- 1 pinch flaky sea salt (0.5g)
- 0.75 cup high-quality mayonnaise (170g)
- 1 tablespoon fresh lemon juice (15g)
- 0.5 teaspoon Dijon mustard (3g)
- 0.25 teaspoon sea salt (1.5g)
- 1 pinch cracked black pepper (0.1g)
Instructions:
- Preheat your oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves, drizzle with the 4.5g of oil, sprinkle with a pinch of flaky sea salt, and wrap it tightly in foil. Bake for 45 minutes until soft and golden.
- Cool the garlic for 10 minutes, then squeeze the cloves from their skins into a bowl and mash into a smooth paste.
- Whisk the mayonnaise, lemon juice, Dijon mustard, salt, and pepper into the garlic paste until the mixture is thick, glossy, and fully emulsified.
