Ingredients:

  • 2 lbs ripe tomatoes
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 small clove garlic, minced

Instructions:

  1. Slice the tomatoes into uniform wedges or thick rounds (about 1/2 inch thick) and thinly slice the red onion into half-moons.
  2. In a small jar or whisking bowl, combine the olive oil, balsamic vinegar, Dijon mustard, honey, and minced garlic. Shake or whisk vigorously until the mixture is opaque and creamy.
  3. Place the tomatoes and onions in a large mixing bowl, drizzle the dressing over the top, and toss gently with tongs.
  4. Fold in the torn basil leaves and sprinkle with sea salt and black pepper immediately before serving.
