Ingredients:
- 2 lbs ripe tomatoes
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 small clove garlic, minced
Instructions:
- Slice the tomatoes into uniform wedges or thick rounds (about 1/2 inch thick) and thinly slice the red onion into half-moons.
- In a small jar or whisking bowl, combine the olive oil, balsamic vinegar, Dijon mustard, honey, and minced garlic. Shake or whisk vigorously until the mixture is opaque and creamy.
- Place the tomatoes and onions in a large mixing bowl, drizzle the dressing over the top, and toss gently with tongs.
- Fold in the torn basil leaves and sprinkle with sea salt and black pepper immediately before serving.
