Ingredients:

  • 2 lbs heirloom tomatoes, mixed colors
  • 1/2 small red onion, thinly shaved
  • 1/4 cup fresh basil leaves, torn by hand
  • 1/2 tsp flaky sea salt
  • 1/4 tsp freshly cracked black pepper
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 small garlic clove, minced into a paste
  • 1 tsp fresh lemon juice

Instructions:

  1. Slice the heirloom tomatoes into uniform pieces, arrange them in a large bowl, and sprinkle with half of the flaky sea salt. Let them sit for 3-5 minutes to allow natural juices to release.
  2. In a small jar or bowl, whisk together the olive oil, red wine vinegar, minced garlic, and lemon juice vigorously until the mixture is opaque and thickened.
  3. Add the shaved red onion and torn basil to the tomatoes.
  4. Pour the vinaigrette over the salad and toss with extreme gentleness using hands or a silicone spatula.
  5. Season with the remaining salt and freshly cracked black pepper.
