Ingredients:
- 2 lbs heirloom tomatoes, mixed colors
- 1/2 small red onion, thinly shaved
- 1/4 cup fresh basil leaves, torn by hand
- 1/2 tsp flaky sea salt
- 1/4 tsp freshly cracked black pepper
- 2 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1 small garlic clove, minced into a paste
- 1 tsp fresh lemon juice
Instructions:
- Slice the heirloom tomatoes into uniform pieces, arrange them in a large bowl, and sprinkle with half of the flaky sea salt. Let them sit for 3-5 minutes to allow natural juices to release.
- In a small jar or bowl, whisk together the olive oil, red wine vinegar, minced garlic, and lemon juice vigorously until the mixture is opaque and thickened.
- Add the shaved red onion and torn basil to the tomatoes.
- Pour the vinaigrette over the salad and toss with extreme gentleness using hands or a silicone spatula.
- Season with the remaining salt and freshly cracked black pepper.
