Ingredients:
- 6 medium Roma tomatoes, seeded and diced (680g)
- 1/2 cup white onion, finely diced (75g)
- 2 jalapeno peppers, minced (28g)
- 1/2 cup fresh cilantro, chopped (15g)
- 2 tbsp fresh lime juice (30ml)
- 1 tsp kosher salt (6g)
- 1/4 tsp cracked black pepper (1g)
- 1 small clove garlic, minced (3g)
Instructions:
- Wash all produce. Slice the Roma tomatoes in half, scoop out the seeds, and dice into uniform 1/4-inch cubes. Finely mince the onion, jalapeno, and garlic.
- In a large mixing bowl, combine the diced tomatoes, onion, jalapeno, and garlic. Pour in the fresh lime juice and sprinkle with salt and black pepper. Toss gently to coat.
- Fold in the chopped cilantro. Let the salsa sit at room temperature for 15 minutes to allow the flavors to meld and the tomatoes to release their juices.
