Ingredients:

  • 6 medium Roma tomatoes, seeded and diced (680g)
  • 1/2 cup white onion, finely diced (75g)
  • 2 jalapeno peppers, minced (28g)
  • 1/2 cup fresh cilantro, chopped (15g)
  • 2 tbsp fresh lime juice (30ml)
  • 1 tsp kosher salt (6g)
  • 1/4 tsp cracked black pepper (1g)
  • 1 small clove garlic, minced (3g)

Instructions:

  1. Wash all produce. Slice the Roma tomatoes in half, scoop out the seeds, and dice into uniform 1/4-inch cubes. Finely mince the onion, jalapeno, and garlic.
  2. In a large mixing bowl, combine the diced tomatoes, onion, jalapeno, and garlic. Pour in the fresh lime juice and sprinkle with salt and black pepper. Toss gently to coat.
  3. Fold in the chopped cilantro. Let the salsa sit at room temperature for 15 minutes to allow the flavors to meld and the tomatoes to release their juices.
