Ingredients:
- 1/4 cup soy sauce
- 1 tbsp honey
- 1 tbsp toasted sesame oil
- 1 tbsp fresh ginger, finely grated
- 2 cloves garlic, minced
- 1 tsp rice vinegar
- 2 Ahi tuna steaks (6 oz each)
- 2 tbsp sesame seeds, mixed black and white
- 1 tbsp neutral oil
- 1/2 tsp kosher salt
Instructions:
- In a small bowl, whisk together soy sauce, honey, sesame oil, grated ginger, minced garlic, and rice vinegar.
- Place tuna steaks in a shallow dish or zip-top bag, pour over the marinade, and let sit at room temperature for 15 minutes.
- Remove tuna from the marinade and pat the steaks very dry with paper towels.
- Sprinkle kosher salt over the steaks and press them firmly into the sesame seeds on all sides until a uniform crust is formed.
- Heat a cast iron skillet over medium-high heat with neutral oil until the oil shimmers and barely begins to smoke.
- Sear the tuna for 1 to 2 minutes per side to achieve a rare center.
- Remove from pan and let the tuna rest for two minutes before slicing into sashimi-style slices.
