Ingredients:
- 4 large ripe peaches, cubed (450g)
- 1 cup fresh strawberries, quartered (150g)
- 1 cup fresh blueberries (150g)
- 1/2 cup fresh raspberries (75g)
- 2 tbsp honey (42g)
- 1 tbsp fresh lime juice (15ml)
- 1 tsp lime zest (5ml)
- 1 tbsp fresh mint, chiffonaded (4g)
Instructions:
- Dice the peaches into 3/4 inch (2cm) cubes. Note: Uniform size ensures every bite has a mix of flavors
- Quarter the strawberries to match the size of the peaches for uniform bites.
- Pour the honey, lime juice, and lime zest into a small bowl.
- Whisk the glaze until the mixture is glossy and completely integrated.
- Place the cubed peaches, quartered strawberries, and blueberries into the large glass bowl.
- Pour the honey lime glaze over the fruit.
- Use a silicone spatula to gently fold the fruit until it looks glossy. Note: Use a folding motion, not a stirring motion
- Fold in the raspberries last. Note: Raspberries are fragile and will bleed color if over mixed
- Sprinkle the chiffonaded mint over the top just before serving.
