Ingredients:
- 1/4 cup warm water (105°F–115°F)
- 1 tbsp granulated sugar
- 2 1/4 tsp active dry yeast
- 1 cup whole milk, scalded and cooled
- 1/4 cup honey
- 4 tbsp unsalted butter, melted and cooled
- 1 large egg, room temperature
- 1 tsp fine sea salt
- 4.25 cups all-purpose flour
- 2 tbsp unsalted butter, melted (for brushing)
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 cup honey (for butter)
- 1 tsp ground cinnamon
Instructions:
- In a mixer bowl, combine warm water, 1 tablespoon sugar, and yeast. Let sit for 5–10 minutes until foamy.
- Add lukewarm milk, 1/4 cup honey, 4 tbsp melted butter, egg, and salt. Gradually add flour 1/2 cup at a time using a dough hook until dough clears the sides of the bowl.
- Knead the dough for 5 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
- Punch down dough and roll into a rectangle 1 inch thick. Cut into 24 squares and place on a parchment-lined baking sheet. Let rise for another 30 minutes.
- Bake at 350°F (180°C) for 15 minutes until golden brown. Brush immediately with remaining 2 tbsp melted butter.
- Whip 1/2 cup softened butter, powdered sugar, 1/4 cup honey, and cinnamon together until fluffy. Serve with warm rolls.
