Ingredients:

  • 2 pints (600g) cherry tomatoes, halved
  • 1/2 cup (15g) fresh basil leaves, torn by hand
  • 1/4 cup (40g) red onion, thinly sliced
  • 8 oz (225g) fresh mozzarella pearls
  • 3 tbsp (45ml) extra virgin olive oil
  • 1 tbsp (15ml) balsamic vinegar
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) freshly cracked black pepper
  • 1 clove (5g) garlic, minced finely

Instructions:

  1. Wash and dry the cherry tomatoes thoroughly. Slice the cherry tomatoes in half and slice the red onion into paper-thin half-moons. Place them in a large mixing bowl.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper vigorously for 30 seconds until the mixture looks thickened and glossy.
  3. Pour the dressing over the tomato and onion mixture. Toss gently with a spoon until every piece is lightly coated.
  4. Fold in the torn basil leaves and mozzarella pearls. Stop tossing as soon as ingredients are distributed to prevent the basil from wilting.
