Ingredients:
- 2 pints (600g) cherry tomatoes, halved
- 1/2 cup (15g) fresh basil leaves, torn by hand
- 1/4 cup (40g) red onion, thinly sliced
- 8 oz (225g) fresh mozzarella pearls
- 3 tbsp (45ml) extra virgin olive oil
- 1 tbsp (15ml) balsamic vinegar
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) freshly cracked black pepper
- 1 clove (5g) garlic, minced finely
Instructions:
- Wash and dry the cherry tomatoes thoroughly. Slice the cherry tomatoes in half and slice the red onion into paper-thin half-moons. Place them in a large mixing bowl.
- In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper vigorously for 30 seconds until the mixture looks thickened and glossy.
- Pour the dressing over the tomato and onion mixture. Toss gently with a spoon until every piece is lightly coated.
- Fold in the torn basil leaves and mozzarella pearls. Stop tossing as soon as ingredients are distributed to prevent the basil from wilting.
