Ingredients:

  • 3 large overripe bananas, mashed (approx. 340g)
  • 1/3 cup (80ml) melted coconut oil
  • 1/2 cup (100g) packed brown sugar
  • 1 tsp (5ml) pure vanilla extract
  • 1 tbsp (15ml) apple cider vinegar
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1/2 cup (85g) vegan chocolate chips
  • 1/2 cup (60g) chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your 9x5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the overripe bananas until no large lumps remain.
  3. Stir in the melted coconut oil, brown sugar, vanilla extract, and apple cider vinegar until the mixture is smooth and emulsified.
  4. Sift the all-purpose flour, baking soda, salt, and ground cinnamon directly into the wet mixture.
  5. Using a spatula, gently fold the ingredients together until no streaks of white flour remain. Do not overmix.
  6. Gently fold in the vegan chocolate chips and chopped walnuts.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
