Ingredients:
- 3 large overripe bananas, mashed (approx. 340g)
- 1/3 cup (80ml) melted coconut oil
- 1/2 cup (100g) packed brown sugar
- 1 tsp (5ml) pure vanilla extract
- 1 tbsp (15ml) apple cider vinegar
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/2 cup (85g) vegan chocolate chips
- 1/2 cup (60g) chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9x5 inch loaf pan or line it with parchment paper.
- In a large mixing bowl, mash the overripe bananas until no large lumps remain.
- Stir in the melted coconut oil, brown sugar, vanilla extract, and apple cider vinegar until the mixture is smooth and emulsified.
- Sift the all-purpose flour, baking soda, salt, and ground cinnamon directly into the wet mixture.
- Using a spatula, gently fold the ingredients together until no streaks of white flour remain. Do not overmix.
- Gently fold in the vegan chocolate chips and chopped walnuts.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
