Ingredients:
- 1 lb Large Shrimp, peeled and deveined, tail-off
- 1 Lemon, halved
- 2 cloves Garlic, smashed
- 1 tsp Black Peppercorns
- 1 tbsp Sea Salt
- 1/4 cup Mayonnaise
- 1/4 cup Plain Greek Yogurt
- 1 tbsp Dijon Mustard
- 1 tsp Old Bay Seasoning
- 1 tbsp Fresh Lemon Juice
- 1/2 tsp Lemon Zest
- 1/2 tsp Smoked Paprika
- 2 ribs Celery, finely diced
- 2 Green Onions, thinly sliced
- 1/4 cup Fresh Dill, roughly chopped
- 1/4 cup Red Onion, finely minced
Instructions:
- Place shrimp in a saucepan and cover with cool water by 1 inch. Add lemon halves, smashed garlic, peppercorns, and sea salt.
- Set heat to medium-high. Monitor closely and remove shrimp with a slotted spoon as soon as the water reaches a bare simmer and shrimp are opaque and pink (approx. 3–5 minutes).
- Transfer shrimp to a colander and rinse with ice-cold water. Pat completely dry with paper towels to ensure the dressing adheres properly.
- In a large mixing bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, Old Bay, lemon juice, zest, and smoked paprika.
- Fold the dried shrimp, diced celery, green onions, red onion, and fresh dill into the dressing. Toss gently to coat and serve immediately or chilled.
