Ingredients:

  • 1 lb Large Shrimp, peeled and deveined, tail-off
  • 1 Lemon, halved
  • 2 cloves Garlic, smashed
  • 1 tsp Black Peppercorns
  • 1 tbsp Sea Salt
  • 1/4 cup Mayonnaise
  • 1/4 cup Plain Greek Yogurt
  • 1 tbsp Dijon Mustard
  • 1 tsp Old Bay Seasoning
  • 1 tbsp Fresh Lemon Juice
  • 1/2 tsp Lemon Zest
  • 1/2 tsp Smoked Paprika
  • 2 ribs Celery, finely diced
  • 2 Green Onions, thinly sliced
  • 1/4 cup Fresh Dill, roughly chopped
  • 1/4 cup Red Onion, finely minced

Instructions:

  1. Place shrimp in a saucepan and cover with cool water by 1 inch. Add lemon halves, smashed garlic, peppercorns, and sea salt.
  2. Set heat to medium-high. Monitor closely and remove shrimp with a slotted spoon as soon as the water reaches a bare simmer and shrimp are opaque and pink (approx. 3–5 minutes).
  3. Transfer shrimp to a colander and rinse with ice-cold water. Pat completely dry with paper towels to ensure the dressing adheres properly.
  4. In a large mixing bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, Old Bay, lemon juice, zest, and smoked paprika.
  5. Fold the dried shrimp, diced celery, green onions, red onion, and fresh dill into the dressing. Toss gently to coat and serve immediately or chilled.
