Ingredients:

  • 2 cups (300g) cherry tomatoes, halved
  • 1/2 cup (15g) fresh basil leaves, torn by hand
  • 8 oz (225g) fresh mozzarella pearls, drained
  • 1 cup (150g) cucumber, diced
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) balsamic vinegar
  • 1 tsp (5ml) honey
  • 1 clove (3g) garlic, minced finely
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Wash the cherry tomatoes and pat them completely dry. Slice them in half lengthwise. Dice the cucumber into quarters to match the scale of the tomatoes.
  2. Combine the olive oil, balsamic vinegar, honey, minced garlic, salt, and pepper in a small jar. Shake vigorously for 30 seconds or whisk until the mixture is thickened and opaque.
  3. Place the halved tomatoes, mozzarella pearls, and cucumber in a large mixing bowl. Pour the dressing over the top and toss gently with a spoon.
  4. Fold in the hand-torn basil leaves last to prevent bruising and maintain the vibrant green color.
