Ingredients:
- 2 cups (300g) cherry tomatoes, halved
- 1/2 cup (15g) fresh basil leaves, torn by hand
- 8 oz (225g) fresh mozzarella pearls, drained
- 1 cup (150g) cucumber, diced
- 3 tbsp (45ml) extra virgin olive oil
- 2 tbsp (30ml) balsamic vinegar
- 1 tsp (5ml) honey
- 1 clove (3g) garlic, minced finely
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) black pepper
Instructions:
- Wash the cherry tomatoes and pat them completely dry. Slice them in half lengthwise. Dice the cucumber into quarters to match the scale of the tomatoes.
- Combine the olive oil, balsamic vinegar, honey, minced garlic, salt, and pepper in a small jar. Shake vigorously for 30 seconds or whisk until the mixture is thickened and opaque.
- Place the halved tomatoes, mozzarella pearls, and cucumber in a large mixing bowl. Pour the dressing over the top and toss gently with a spoon.
- Fold in the hand-torn basil leaves last to prevent bruising and maintain the vibrant green color.
