Ingredients:

  • 28 oz Roma tomatoes, seeded and diced
  • 1/2 cup white onion, roughly chopped
  • 2 cloves garlic, peeled
  • 1 medium jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 1 tsp sea salt
  • 1/2 tsp ground cumin
  • 1/2 tsp granulated sugar

Instructions:

  1. Place the white onion, garlic, and jalapeño into the food processor. Pulse 3-5 times until finely minced but not pureed. Transfer this mixture to your large bowl.
  2. Add the seeded, diced Roma tomatoes and chopped cilantro to the bowl. Pour over the lime juice, sea salt, ground cumin, and sugar. Use a spatula to gently fold the ingredients together until the tomatoes are evenly coated in the aromatics.
  3. Cover the bowl and let the salsa rest at room temperature for 10 to 15 minutes to allow the salt to draw out moisture and integrate the flavors.
