Ingredients:
- 28 oz Roma tomatoes, seeded and diced
- 1/2 cup white onion, roughly chopped
- 2 cloves garlic, peeled
- 1 medium jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp fresh lime juice
- 1 tsp sea salt
- 1/2 tsp ground cumin
- 1/2 tsp granulated sugar
Instructions:
- Place the white onion, garlic, and jalapeño into the food processor. Pulse 3-5 times until finely minced but not pureed. Transfer this mixture to your large bowl.
- Add the seeded, diced Roma tomatoes and chopped cilantro to the bowl. Pour over the lime juice, sea salt, ground cumin, and sugar. Use a spatula to gently fold the ingredients together until the tomatoes are evenly coated in the aromatics.
- Cover the bowl and let the salsa rest at room temperature for 10 to 15 minutes to allow the salt to draw out moisture and integrate the flavors.
